Rigatoni Pie

Ingredients

1 tablespoon olive oil
1 lb ground beef
2 cloves garlic, minced (we usually sneak a couple more in)
1 teaspoon salt
1/4 teaspoon pepper
2 cans crushed tomato
1 lb rigatoni
1 cup parmesan cheese, grated
1 cup mozzarella, shredded

Instructions

1. Boil the rigatoni in salted boiling water until just underdone or al dente
2. Drain the pasta and place in a bowl with a little olive oil. Set aside.
3. Preheat oven to 400F/200C
4. In a pan, heat the olive oil and add the ground beef
5. Break up and stir the beef until brown
6. Add in the garlic, salt, and pepper. Stir until combined
7. Add in the crushed tomatoes and simmer until thickened, about 20 minutes
8. Sprinkle the prepared pasta with the parmesan cheese and mix
9. In a springform pan, place the rigatoni noodles standing up to fill the pan
10. Pour the sauce over the noodles and bake for 15 minutes
11. Sprinkle the pie with the mozzarella cheese and bake for another 15 minutes
12. Slice and serve!

Description

At the start of the pandemic in March of 2020, I decided to come home from college and live with my parents. With what we thought would be a week or two turned into months. Very quickly our go-to dishes got boring to us and we were searching for some creativity. My family always jokes that if you are what you eat then I am pasta because every dish I request has some sort of noodle in it. We spent days trying to find creative dishes we had never heard of and tried multiple, some we still make and others we decided were best as a one time thing. One night my dad decided to surprise us and when we heard pie we were immediately skeptical. But this is now one of our all time favorite meals. Not only is it a jaw dropping dish with all the noodles standing up and everyone gets a individual slice, but it is delicious. The sauce perfectly falls into each noodle and the layer of cheese on top perfectly melts. I highly recommend making this if you love pasta and it will definitely impress your friends and family.
