Italian Bread
Parmesan Cheese
Green Olive Tapenade (Can be homemade or pre-made)
Cherry Tomatoes
Olive Oil
Balsamic Vinegar
Garlic Powder
Italian Seasoning


1.) Heat a large frying pan on medium/high heat and add olive oil. Slice Italian bread into half inch slices. Use test piece of bread to make sure oil is at the right temperature. Oil should be hot enough where a few pops happen but not splattering. Add bread to pan and cook until a light golden brown. Remove all pieces of bread when complete and place on baking sheet and cover with grated parmesan cheese and place in oven that is set on warm.
2.) Slice the cherry tomatoes into quarters and add to a medium bowl. Add a dash of olive oil and balsamic vinegar along with garlic powder, Italian seasoning, salt, and pepper. Toss lightly in the bowl. Add tomato mixture to the same pan used to fry the bread. Cook on high heat for about 1 minute or until the juices from the tomatoes being to run.
3.) Remove bread from oven and arrange on dish. Add green olive tapenade to the bread. Add tomato mixture on top of the tapenade and finally top with extra grated parmesan cheese.

Easy Bruschetta


Beginning in the pandemic, I was bored like most people so I decided to start cooking more and coming up with my own dishes. One thing I do not like about cooking is the stress of it and trying to stick to a specific recipe. So I decided to create this recipe so that it can be adjusted in anyway. If one person wants to cook it for themselves, they can. If they want to make it for a party, they can do that as well. There are no measurements because its a very casual recipe and I made it and have shared with others who want to not worry about specifics when cooking.
