Cauliflower Pasta


One whole head cauliflower
one shallot
4 cloves garlic
1/2-1 cup heavy cream
as much Parmesan as your heart desires
tubular noodles (I like rigatoni or calamarata)
reserved pasta water
1-2 tsp red pepper flakes
stale bread


To make the breadcrumb topping:
1. roughly tear the bread and place in blender, pulse for a couple seconds to get large breadcrumbs
2. heat butter in a cast iron skillet and add breadcrumbs
3. toss in pan until deeply browned and top with freshly grated Parmesan
The Pasta:
1. slice the cauliflower into 1/4" slices and place in pan over medium/high heat with olive oil
2. add the shallot, garlic and season with red pepper flakes, salt and pepper
3. sauté until the shallot and cauliflower are softer and slightly browned
4. add the cream and lower heat to medium/low
5. bring water to a boil and add pasta
6. add some of the reserved pasta water to the cauliflower sauce to loosen if needed
7. finish cooking the pasta in the sauce
8. add a squeeze of lemon juice and some of the zest to the sauce
9. plate your pasta and top with breadcrumbs and chopped parsley

Cauliflower Pasta


This dish has been such a comfort during the last year. If I'm having a tough day and want to zone out and just cook, this is my go-to recipe. It is creamy and surprisingly delicious and has a ton of cauliflower in it- so it's not completely terrible for you! I made this for my mom and I every week when I first moved home during the beginning of lockdown.
