Alfredo Pasta with Oven-roasted Tomatoes

Ingredients

A box of noodles, portioned to your liking
FOR ROASTED TOMATOES:
Cherry tomatoes, portioned to your liking
Olive oil
Garlic powder, to taste
Salt, to taste
FOR ALFREDO SAUCE:
1/2 cup butter
1 & 1/2 cups heavy whipping cream
2 tablespoons garlic, minced
1/2 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups freshly grated Parmesan cheese

Instructions

1. Preheat oven to 450 degrees F.
2. While oven is preheating, cut cherry tomatoes into halves and place on a cookie sheet pan.
3. Drizzle some olive oil on tomatoes and move them around so they are all coated.
4. Then sprinkle salt and garlic powder on as well.
5. Once the oven is preheated put tomatoes in for 15 to 20 minutes.
6. Follow directions on box of noodles to start preparing the pasta.
7. After the noodles are cooked, start on the Alfredo sauce.
8. In a large skillet add the butter and cream.
9. Simmer on low heat for about 2 minutes.
10. Whisk in the Italian seasoning, salt, pepper, and garlic for about a minute.
11. Whisk in the Parmesan cheese until completely melted.
12. Take the tomatoes right of of the sheet pan and add on top of your Alfredo pasta.

This is a picture I took after the first time I made the Alfredo and the roasted tomatoes. When I would cook for myself back home, it was a lot of quick and easy meals. I was always too nervous about trying to cook so after I had attempted this pasta and succeeded, I was extremely proud of myself. My roommate has a metabolic disorder where she cannot eat a certain amino acid found in protein, so I made her some with low protein noodles (Nutricia Loprofin). She eats a tomato based sauce with her pasta instead. It made her really happy having a similar meal specialized for her that she could eat, which made me happy.
