Focaccia Bread with Grapes, Rosemary, and Wine Salt

Ingredients

2 cups bread flour
3tsp. Fresh Yeast (or 1 tsp dry yeast) mixed with 1 cup of warm water
1 tbsp salt

Instructions

1.) Mix flour and yeast mixture by hand
2.) Add salt and mix for 3-4 minutes
3.) Let it sit until it DOUBLES in size
4.) Once doubled: Put dough in 1/4 sheet tray with olive oil cover and refrigerate for 1hr to 3 Days
5.)When ready, uncover and add dimples with fingertips
6.) Top with halved grapes, fresh rosemary, and coarse salt or wine salt
7.) Top with parmesan
8.) Bake at 450-500 degrees in the oven for 20-25 minutes or until golden

Wine Infused Salt
1.) 2 parts coarse sea salt
2.) 1 part red wine
3.) mix together and put into a 150 degree oven until wine evaporates (about 45 minutes)

Description

My mother and I spent time over quarantine watching Cleveland native, Michael Symon livestream cooking from his kitchen which is very near to where we live. We prepared it in our kitchen. This was special because I was able to collaborate and connect with my mom in spite of the crazy circumstances.
