Ingredients

4 cups fresh basil leaves, loosely packed
3 large handfuls of arugula
1 cup macadamia nuts
1/2 cup pine nuts
Juice from 2 large lemons
1/2 cup olive oil
Salt
Pepper
Garlic powder
Onion powder

Instructions

1. Using a small food processor, process the nuts until ground.
2. In a large food processor, add the basil, arugula, ground-up nuts, olive oil, lemon juice, and seasoning (to taste).
3. Process for a few minutes until smooth.

Description

My family would make this on a weekly basis during Covid and use it in all sorts of ways. Whether as a dip for veggies or pretzels, a topping for homemade pizzas, or as a sauce for pasta, it was something that the entire family could enjoy throughout the week. This was especially nice to have as a quick and convenient snack during the pandemic when stuck doing work inside the house.
