yellow onion
3 cloves of garlic
1 stalk of celery
1/2 green pepper
1/2 red pepper
1-2 cans of black beans
salt, pepper, cumin, chili powder & balsalmic vinegar to taste


Black Beans and Rice

This is one of my favorites. It’s quick and easy and so satisfying.

Saute a yellow onion and 2-3 cloves of garlic in olive oil.
After 5-10 minutes add a stalk of celery, then half a green pepper and half of a red pepper. Season the vegetables with salt and pepper, a generous amount of cumin and some chili powder or chipotle.
Add one or two cans of black beans (drain off the liquid first).
Add a generous splash of balsamic vinegar.

Serve over rice and top with grated cheese and sour cream.
