Homemade Italian Sausage
Ingredients
5 pounds of boston butt
2 1/2 teaspoons of salt
2 1/2 teaspoons of crushed red pepper
5 teaspoons of fennel
2 1/2 teaspoons of minced garlic
2 1/2 teaspoons of black pepper
2 1/2 teaspoons of salt
2 1/2 teaspoons of crushed red pepper
5 teaspoons of fennel
2 1/2 teaspoons of minced garlic
2 1/2 teaspoons of black pepper
Instructions
1. Mix all ingredients thoroughly.
2. Drop by handful into sausage maker with casings attached.
3. Hold casings while sausage is being pressed out of the maker.
4. Tie off casings ends and store in gallon size freezer bags for up to 3 months.
5. One gallon bag holds 8 sausage links
6. When cooking sausage, preheat the oven to 350 degrees.
7. Bake for 45-60 minutes in the oven on a cookie tray on the top shelf of your oven.
8. Enjoy!

Description
I prepared this recipe at my parents house with my brother, dad, and uncle in February. This recipe is special to me because my family was able to enjoy good quality Italian food while restaurants were closed. This meal brought my family and I together during the pandemic.
