1 (14.5 ounce) package nacho cheese-flavored Doritos, lightly crushed
2 ½ to 3 cups rotisserie chicken, shredded
1 can black beans, rinsed and drained
1 (15.25 ounce) can corn, drained
8 oz. shredded colby jack cheese
1-10 oz. mild diced tomatoes and green chiles (Ro-tel)
1- 4 oz. can green chilies
1 (10.75 ounces) can condensed cream of chicken soup
8 ounces sour cream
1 tablespoon taco seasoning
Cilantro for garnish, optional


1. Preheat oven to 350 degrees.
2. Lightly spray a 9x13-inch baking dish with cooking spray.
3. Spread half the crushed chips into the bottom of the prepared baking dish.
4. In a large bowl, stir together the chicken, black beans, corn, 1 cup of cheese, Ro-tel, green chiles, cream of chicken soup, sour cream and the taco seasoning.
5. Spread the mixture evenly over the chips in the baking pan.
6. Bake for 20 minutes.
7. Spread the remaining chips evenly over the top, then sprinkle with the remaining cheese.
8. Bake another 5 to 7 minutes or until the cheese is melted.
9. Garnish with cilantro, optional.

One-day a couple of weeks into quarentine my sisters and I had finished our online school work and we were bored, so I got on Pinterest to try and find something to do. One of the first things to come up on my home page was this recipe, and with my sisters being picky eaters how could we go wrong with a dish made with Doritos. I drove to Kroger and got all the ingredients, and my sisters and I prepared it together. The dish was simple to make and tasted so delicious. The way the dish was crunchy and creamy at the same time was incredible.
