Thursday Night Pasta

1 chopped onion
3 tablespoons olive oil or canola oil
2 teaspoons of garlic if you have it
1 pound of meat of choice (lamb, beef, turkey, veal, or pork)
1 bottle of sauce of choice (You can even use a puttanesca sauce if you like spice)
1/8 of a bottle of water (read the recipe on this)

1. In a large pan, not non-stick, heat oil at medium-high and add the onion. Turn down to the temperature of the pan a little bit.
2. Cook for about 5 minutes until the onion looks clear. Add garlic and then cook for about 2 minutes.
3. Move the onion, oil, and garlic to the side and add the ground meat.
4. Use a metal spatula to break up the meat and keep doing that until the meat is fully cooked.
5. Add a bottle of sauce to the pan
6. Then, put about 1/8 of a bottle of water in the jar, put on the lid, and swirl it around to get the rest of the sauce. Add the water mixed with the remains of the sauce into the pan.
7. Turn the stove down to medium-low and cook for about 45 minutes to an hour, stirring occasionally (every 15 minutes or so).
8. About 15 minutes before you want to eat, boil the pasta water and follow instructions on the pasta package or fresh pasta of your choice.

This pasta sauce recipe originated from my mom who started making this when she was young and had to cook dinner for the family. This recipe was made a lot during quarantine since it is simple does not require crazy ingredients, and tastes really good. It became a weekly meal when we ran out of ideas since my family always had to cook since we did not really order food when the lockdown began. What I also love about this recipe is that it can be different every night since you can change what meat is in the sauce and you can even change the type of sauce you put in depending on what you want to eat.
